Cake, Cake and More Cake


Lady Hiva was asked by some people in our congregation to make a birthday/marriage proposal cake for a surprise party. They wanted the inside to be colorful and delicious. That left the remaining details up for her creative ability.

She spent several weeks planning out what she wanted to do. I would find small reminders that it was in progress. The white board we take notes had a sketch drawn out, random pieces of scrap paper had new recipes and ideas for the cake.



She tried several different types of cakes but ultimately ended up with Guava cake with guava compte and cream cheese frosting, Chocolate Haupia with Chocolate ganache, and Lilikoi cake with a lilikoi orange compote and cream cheese frosting. It made a cake with 10 layers and stood about 3.5 feet tall! It was a tray and a half of eggs, a Costco size bottle of vanilla, 6 pounds of butter, 8 32oz. bags of sugar, and 9 cream cheeses! Not to mention the fruit compotes, haupia filling and the ganache.

The outside of the cake we went back and forth. They wanted colorful and Lady Hiva and I went through photos and photos of cakes for ideas. Lady Hiva really just DOES NOT GET WHAT COLORFUL IS! She kept showing me photos with pale pastels or gold. NO! Color is color. At the end of the day she went with white and colorful fresh flowers.

























The second cake was just to hide the "ring." They wanted it to spill out with the candies. That cake was 4 layers and then I filled it with colorful Sixlets. We ended up using a Ring Pop to substitute for the ring. As Lady Hiva and I do, we were working on it at Midnight, and Koala Bear and stayed up with us because she had a late nap. I did not think she was paying attention to what we were doing as she flitted around the room playing. But as we were at the surprise party and the bride-to-be was cutting the cake, Koala Bear yelled, "That cake has a RING POP in it!" I had to laugh because she is so smart. But both Lady Hiva and I were trying to cover her mouth. I was shocked she knew which one it was as there were 4 layers of cake that we had been working on.











The cakes turned out wonderful! They were beautiful AND tasted amazing!
